My Method

At Viking Sharp Hand Knife Sharpening, I take the utmost care with your knives, preferring hand-sharpening because it’s more precise and less destructive to the knife. With hand-sharpening, I only remove as much metal as needed, so the knife lasts longer.

  • I first determine the correct angle of the knife bevel according to the knife manufacturer.
  • I tape up the sides of the blade to avoid any unnecessary scratches.
  • I use a series of stones, usually four of five, ranging from coarse to fine, to produce a sharp finish on the bevel of the knife.
  • Finally, I check the knife for uniform sharpness and return it to you in a protective sheath.
